This is one of the tastiest dishes.
Cut brinjal into 2 inch pieces.
Mix some turmeric powder.
Heat some oil in a pan.
Fry the turmeric coated brinjal in small quantities until the colour of the brinjal changes into brown.
Spread the fried brinjals on kitchen paper to absorb oil.
Then put
quarter cup of vinegar,
4 table spoons of sugar
crushed garlic and crushed ginger into a pan.
Allow it to boil and then add the fried Brinjal.
Cook well until dry.
